Pumpkin Spice Sundae

I declare myself a fan of pumpkin in all its forms. Since I live in Zagreb, I look forward to autumn and winter (despite the cold) to enjoy a delicious Pumpkin Spice Latte. While this dessert is not warm, its flavors are inspired by this season. As someone who enjoys cold ice cream, I present the sundae version of a pumpkin spiced latte.

Ingredients

Recipe for 6 Servings:

  • 150 g roasted pumpkin puree
  • 80 ml canned coconut milk
  • 30 ml maple syrup
  • 30 ml melted coconut oil
  • 1⁄4 tsp vanilla powder
  • Zest of half an orange
  • Cinnamon and ginger powder to taste
  • A pinch of pink or sea salt

 

For Plating:

  • Orange zest for ice cream
  • Mixed crushed toasted hazelnuts with a little coconut sugar
  • Cacao nibs
Preparation

Prepare the Pumpkin Puree:

  1. Cut the squash in half and place it cut-side down on the baking sheet with the seeds inside. This will make it juicier.
  2. Bake for 45 to 50 minutes at 160°C (320°F).
  3. Once roasted and very tender, let it cool and remove the seeds.
  4. Blend the pumpkin until a smooth and creamy purée is achieved. If you have organic pumpkins, include the skin to make the puree.

Make the Ice Cream:

  1. In a blender, mix the pumpkin puree, coconut milk, maple syrup, salt, orange zest, vanilla, and spices until smooth.
  2. Add the melted coconut oil and blend at low speed to emulsify the mixture.
  3. Pour the mixture into individual moulds or a mould of your choice, cover the surface, and freeze.

Assemble the Dessert:

  1. Unmould the ice cream 20 to 30 minutes before serving.
  2. Place the ice cream on a base of toasted hazelnuts, coconut sugar, and cacao nibs.
  3. Before serving, add orange zest on the ice cream balls.

Enjoy your pumpkin spice sundae!

If you do not have individual moulds you can freeze the preparation in a bigger mould or bowl
small and cover the surface to avoid the appearance of ice crystals.

If you do this process, remove the mould from the freezer about 30 to 40 minutes before serving, so that you can form ice cream balls a problem.
