I'm fascinated by how simple ingredients can create something as delightful as these rolls. While the ingredients may seem ordinary at first glance, these rolls are anything but typical. They're not just your regular stuffed dates; they're beautiful and distinct, guaranteed to capture your heart.

These rolls are incredibly easy and quick to make, yet they offer a unique twist compared to the classic stuffed dates. They've become a favourite among my friends, who highly recommend sharing this recipe.

 

Ingredients

For 10 Rolls:

  • 10 Medjool dates (the larger and meatier, the better)
  • ¼ cup of hazelnut, tahini, or peanut butter
  • 3 to 4 cups of tamari
  • 200g of cacao paste or unsweetened chocolate with a high cacao percentage

To Decorate:

  • Depending on the type of butter used: hazelnuts, chopped roasted peanuts, sesame seeds, or cocoa nibs.

Materials for Making the Rolls:

  • 2 squares of parchment paper (20x20 cm each)
  • A small amount of melted coconut oil
  • Brush
  • Roller
  • Piping bag (optional)
Preparation
  1. Begin by cutting the dates lengthwise with a knife to remove the pits and flatten them out.
  2. Brush a little melted coconut oil onto a piece of parchment paper to prevent the dates from sticking.
  3. Place a date between two sheets of parchment paper and flatten it using a rolling pin.
  4. Remove the top sheet of parchment paper and brush the date with tamari.
  5. Spread your preferred nut butter along the length of the date, horizontally. Using a pastry bag can simplify this step.
  6. Starting from the base of the date, roll it up tightly, similar to rolling sushi, using the parchment paper as a guide.
  7. Repeat the process with all the dates.
  8. Refrigerate the rolls while melting the cocoa paste or chocolate.
  9. Using a paper cone or pastry bag, cover the rolls with melted chocolate, and sprinkle with dried fruit or cocoa nibs before it sets.

Store the rolls in the refrigerator or freezer in an airtight container. They last for several weeks :)
